We grow vegetables in our backyards so that we can enjoy them at their freshest and most flavorful. Sometimes you have to do a taste test to make sure your vegetables are at their peak, but there are some guidelines to help you judge when to start testing.

Most vegetables are harvested just before their full maturity, for maximum flavor and tenderness. Others need to fully ripen on the plant, in order to store well. Here are some specifics on when to pick what.
