Some plants just don't get the respect they deserve. For years, parsley was just a bit of pretty color, on the side of the plate - tossed out at the end of the meal. It's actually a good source of several vitamins and minerals and I think it makes a mean pesto. It's also wonderfully easy to grow. As a biennial, it doesn't go to see until it's second year. It just grows and grows throughout the summer and well into fall.
So let's give humble parsley it's due, starting with Amy Jeanroy's 5 Cool Things About Parsley.
