Science finally discovered something useful. Yes, the same people who brought us the "eggs are bad, eggs are good, eggs are bad, eggs are good..." discourse have finally figured out why modern tomatoes are lacking in flavor. It seems tomatoes are not supposed to be uniformly red in color.
Traditional tomatoes had green or yellow or white shoulders. But when a beautiful red specimen was found, breeders used it to create more perfect varieties of tomatoes. Unfortunately they have recently discovered that the mutation that resulted in uniform color caused another gene - the one that produced the sugars and all the wonderful things that make a delicious tomato - to be inactivated. Beautiful, but not worth eating.
Of course, this means they are going to try and cook up another designer tomato with the new findings, but I say why not stick with the real thing. Check out tomato lover Colleen Vanderlinden's Top Tasty Heirloom Tomato picks.
