Spinach is a difficult crop for many home gardeners to grow. By the time it’s warm enough to plant it, it’s warm enough for spinach to bolt. The easiest-to-grow spinach substitute is the weed purslane that tries to overrun the garden in the summer. It’s delicious chopped and steamed or boiled. It even freezes well if blanched first. It is also very nutritious!
