Growing potatoes requires faith. All of gardening requires an optimistic attitude, but things that mature underground - unseen - are either wonderful surprises or major disappointments. Here are some tips to help you be surprised.

If you haven't planted your spuds yet, there's still time to get some going. If you can't find seed potatoes at this time of year, sacrifice a few of your favorite organic potatoes for a bigger pay-off in a couple of months. Even short season gardeners will still get a harvest of tender baby potatoes. And don't forget to check out 'King Harry' potatoes. Their fuzzy leaves repel the Colorado potato beetle.

To help you enjoy the fresh taste of your potato harvest, here are some salad recipes that also feature other garden treats - even your cucumber surplus!
